If you’re looking for a filling, easy camping recipe that the whole family will love, you’ve come to the right place. This delicious, cheesy meal isn’t as bad for you as it might seem! We’ve swapped the ground beef for ground turkey to make it lighter, while still full of flavor! Get the recipe below.

Ingredients

  • 2 tablespoons canola oil, divided
  • 4 cups uncooked elbow macaroni
  • 2 pounds ground turkey
  • 1 medium onion
  • 1 29 oz can tomato sauce
  • 1 c. water
  • 1 c. salsa
  • 1 packet of taco seasoning
  • 2 c. shredded cheddar cheese

Directions

  1. Peel the onion and roughly dice it.
  2. You can skip this step, but it adds a ton of flavor. Heat a drizzle of oil in a large skillet over medium heat. Add the pasta and cook, stirring constantly, until it’s a toasty brown. 2-3 minutes should be enough.
  3. Pour the pasta into a 5 qt. crockpot.
  4. Heat another drizzle of oil in the skillet, turning the heat up to medium-high. Cook the turkey and the onion together until there’s no pink left in the meat and the onions are translucent. Be sure to break apart the meat as you cook it.
  5. Pour the meat and onions into the crockpot and add tomato sauce, water, salsa, and taco seasoning.
  6. Cover and cook on low for 2-3 hours until the pasta is cooked through and tender.
  7. Turn off the crockpot, stir in cheese and cover again.
  8. Allow the cheese to melt for around 15 minutes, then stir it again and serve!
